Produced by Talai Berri in the Basque Country  using the Schützenbach method of fermentation, this unique vinegar is made using Txakoli wine made from the Hondarrabi Zuri grape.

In the case of this Gazi-g0z0a, bittersweet  vinegar, the base vinegar is blended with grape must, which has higher concentration of sugar, to achieve a balanced sweet and sour flavor. The resulting vinegar is then aged using the solera method in oak casks for a period of 12 months until the flavors have fully softened and melded together.
